When communicating with overseas food importers for many years, our supply chain team has witnessed countless loss accidents caused by improper enoki mushroom post-harvest handling. Three years ago, a European importer once placed a bulk order of 22 tons of fresh enoki mushroom, and the goods adopted conventional direct loading and sea transportation without pre-cooling treatment. Standardized Pre-Cooling Process for Enoki Mushroom Reduces Internal Core Temperature Rapidly
The core of our pre-cooled enoki mushroom product lies in the two-stage vacuum pre-cooling process independently developed by the factory, which has passed the certification of international cold chain food processing standards. After fresh enoki mushroom is picked and graded, it will be sent to the primary pre-cooling workshop within 90 minutes, and the first round of vacuum cooling will reduce the surface temperature of enoki mushroom to 6℃ within 15 minutes. Then the enoki mushroom enters the secondary constant temperature pre-cooling warehouse, and the internal core temperature of the mushroom stems is uniformly reduced to 0℃ to 2℃ through slow and balanced temperature reduction for 40 minutes. The whole pre-cooling process strictly avoids rapid temperature difference impact, which prevents enoki mushroom from dehydration and fiber embrittlement caused by excessive cooling.
We have compared the storage test data of enoki mushroom with and without pre-cooling treatment under simulated ocean transportation conditions. Under the same container transportation temperature of 2℃, ordinary enoki mushroom without pre-cooling begins to produce peculiar smell and local rot on the 12th day of transportation, while our pre-cooled enoki mushroom can maintain complete appearance and pure delicate flavor for up to 32 days in the same transportation environment. According to the test report issued by the third-party food testing institution, the total number of spoilage bacteria on the surface of pre-cooled enoki mushroom after long-distance transportation is reduced by 91% compared with untreated enoki mushroom, which fundamentally cuts off the main cause of overseas logistics waste of enoki mushroom. Every batch of pre-cooled enoki mushroom leaving the factory will be attached with pre-cooling temperature record forms, so that overseas customers can trace the whole cooling process of the products at any time.
Matching Special Packaging and Cold Chain Logistics for Pre-Cooled Enoki Mushroom
Only relying on pre-cooling treatment cannot maintain the low-temperature stable state of enoki mushroom during long-distance transportation; supporting customized packaging and segmented cold chain transportation are essential supporting links. Our R&D department has developed a breathable micro-hole composite packaging bag exclusive to pre-cooled enoki mushroom. The micropores on the bag can discharge the tiny residual respiratory heat of enoki mushroom while isolating external mixed bacteria, and the inner layer of the packaging is coated with food-grade anti-fog film to avoid water drop backflow soaking enoki mushroom stems in the low-temperature container. For air freight orders with short transportation cycles, we use lightweight insulation foam boxes equipped with constant temperature ice packs to keep the internal temperature of the packaging stable at 0℃ to 4℃; for sea freight orders with more than 25 days of transit time, we adopt full constant temperature refrigerated containers, and install real-time temperature and humidity sensors in each pallet of pre-cooled enoki mushroom. Once the temperature in the local area of the pallet fluctuates beyond the safe range, the logistics control center will receive an early warning signal within 10 minutes, and arrange the port cold storage to adjust the temperature in time after the goods arrive. Many long-term cooperative catering chain customers feedback that after switching to our pre-cooled enoki mushroom, the loss rate of goods received at overseas warehouses dropped from more than 30% to less than 5%, and the procurement comprehensive cost was significantly reduced.

In order to ensure that every batch of pre-cooled enoki mushroom shipped overseas reaches the unified low-loss standard, our factory has built a full-process quality inspection system covering picking grading, two-stage pre-cooling, packaging and warehousing. Professional quality inspectors use portable temperature measuring probes to randomly sample the internal core temperature of enoki mushroom every hour during the pre-cooling production line.
